Cheesy Chicken Broccoli Orzo is a comforting, one-pan dinner made with tender chicken, creamy orzo pasta, fresh broccoli florets, and a rich, cheesy sauce. Perfect for busy weeknights, it’s hearty, flavorful, and ready in under 40 minutes.

Ingredients

  • 1 lb chicken breast or thighs, diced
  • 2 cups broccoli florets
  • 1 1/2 cups orzo pasta
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 3 cups chicken broth
  • 1 cup milk or cream
  • 2 tbsp olive oil or butter
  • 1 tsp salt (to taste)
  • 1/2 tsp black pepper (to taste)

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add diced chicken and cook until browned and fully cooked. Remove and set aside.
  3. In the same skillet, sauté onion and garlic until fragrant and softened.
  4. Stir in the orzo and toast for 1–2 minutes.
  5. Pour in chicken broth and milk (or cream), then bring to a simmer.
  6. Add broccoli florets and cook for 5–7 minutes, until orzo is tender and broccoli is bright green and softened.
  7. Return the cooked chicken to the skillet, then stir in cheddar and Parmesan until creamy and well combined.
  8. Season with salt and pepper to taste.
  9. Serve warm, garnished with extra cheese if desired.

Notes

  • Swap chicken with turkey or rotisserie chicken for convenience.
  • Frozen broccoli can be used—just extend cooking time slightly.
  • Add red pepper flakes for a spicy kick.
  • Try mozzarella, gouda, or Monterey Jack for different cheese flavors.
  • Store leftovers in the fridge for up to 3 days and reheat with a splash of broth or milk.
