Juicy, flavorful chicken fritters loaded with cheese and herbs, perfect as a main dish or appetizer.

Ingredients

  • 1 lb (450g) chicken breast, finely chopped
  • 1 cup shredded mozzarella cheese
  • 2 large eggs
  • 3 tbsp almond flour (or regular flour)
  • 1/4 cup mayonnaise
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. In a large bowl, combine chopped chicken, mozzarella, eggs, flour, mayonnaise, parsley, garlic powder, salt, and pepper. Mix until everything is well combined.
  2. Heat a tablespoon of olive oil in a large skillet over medium heat.
  3. Scoop about 2 tablespoons of the chicken mixture and form into small patties.
  4. Place the patties in the skillet and cook for 3–4 minutes on each side, or until golden brown and cooked through.
  5. Remove and drain on paper towels. Serve warm and enjoy!

Notes

  • You can substitute almond flour with regular flour if not following a gluten-free diet.
  • Ensure the chicken is finely chopped for best texture.
  • Great for meal prep – refrigerate and reheat for quick meals.
  • Serve with a dipping sauce like ranch or garlic aioli for extra flavor.
