Ingredients
1 lb (450g) chicken breast, finely chopped
1 cup shredded mozzarella cheese
2 large eggs
3 tbsp almond flour (or regular flour)
1/4 cup mayonnaise
2 tbsp fresh parsley, chopped
1/2 tsp garlic powder
Salt and pepper to taste
Olive oil for frying
Instructions
In a large bowl, combine chopped chicken, mozzarella, eggs, flour, mayonnaise, parsley, garlic powder, salt, and pepper. Mix until everything is well combined.
Heat a tablespoon of olive oil in a large skillet over medium heat.
Scoop about 2 tablespoons of the chicken mixture and form into small patties.
Place the patties in the skillet and cook for 3–4 minutes on each side, or until golden brown and cooked through.
Remove and drain on paper towels. Serve warm and enjoy!
Notes
You can substitute almond flour with regular flour if not following a gluten-free diet.
Ensure the chicken is finely chopped for best texture.
