Ingredients
1 and ⅓ cups whole milk
2 and ¼ tsp instant yeast (1 packet)
2 tbsp granulated sugar
2 large eggs
6 tbsp unsalted butter, melted and cooled
4 and ¼ cups all-purpose flour (plus extra as needed)
1 and ½ tsp salt
2 tbsp olive oil (for greasing)
1 cup shredded mozzarella cheese
½ cup shredded parmesan cheese
1 tbsp chopped fresh parsley
1 tbsp chopped fresh basil
1 tbsp chopped fresh chives
2 cloves garlic, minced
2 tbsp unsalted butter, melted (for brushing)
Instructions
Warm the milk until it’s lukewarm. In the bowl of a stand mixer, combine milk, yeast, and sugar. Let sit for 5-10 minutes until foamy.
Add eggs and melted butter and mix to combine.
Add flour and salt. Mix with the dough hook on low speed until combined, then knead on medium speed for 8-10 minutes until smooth and elastic. Add a bit more flour if the dough is too sticky.
Grease a large bowl with olive oil, place the dough inside, and turn to coat. Cover and let rise in a warm place for 1 hour or until doubled in size.
Mix the cheeses, herbs, and minced garlic together in a bowl and set aside.
Once risen, punch down the dough and divide it into about 20-24 small pieces. Flatten each piece, fill with a spoonful of cheese mixture, and pinch to seal into a ball.
Place the stuffed dough balls into a greased 9×13 baking dish. Cover and let rise for 30 minutes.
Preheat oven to 350°F (175°C). Brush rolls with melted butter and sprinkle extra herbs on top if desired.
Bake for 25-30 minutes until golden brown and cooked through. Serve warm.
Notes
You can use dried herbs instead of fresh – use 1 tsp of each dried herb.
These rolls can be made ahead and reheated in the oven at 300°F for about 10 minutes.
For a spicier version, add a pinch of red pepper flakes to the cheese filling.
