This Cheesy Loaded Meatloaf Casserole is the ultimate comfort food packed with juicy meatloaf, savory seasonings, and a layer of melty cheese. Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp Italian seasoning
  • 1/2 cup ketchup
  • 1/4 cup BBQ sauce (optional)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup green onions, chopped (for garnish)

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, mix the ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, and Italian seasoning until well combined.
  • Shape the meat mixture into a loaf and place it in a greased 9×13-inch casserole dish.
  • Bake the meatloaf for 25-30 minutes, until it’s mostly cooked through.
  • Remove the casserole dish from the oven and pour the ketchup and BBQ sauce (if using) evenly over the meatloaf.
  • Sprinkle the shredded cheddar and mozzarella cheeses on top of the meatloaf.
  • Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Remove the casserole from the oven and sprinkle the crumbled bacon and chopped green onions on top.
  • Let it cool for a few minutes before slicing and serving.

Notes

  • For a spicier twist, add some hot sauce or chili flakes to the meat mixture or drizzle on top.
  • You can swap the ground beef with ground turkey or chicken for a lighter version.
  • Make this ahead of time and store in the fridge for up to 2 days, then reheat in the oven.
