Cheesy Mashed Potato Puffs are crispy on the outside and soft and fluffy on the inside, made with creamy mashed potatoes, cheddar cheese, and baked to golden perfection. They’re a perfect way to use leftover mashed potatoes as a delicious appetizer or side dish.

Ingredients

  • 3 cups mashed potatoes
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons sour cream
  • 2 tablespoons chopped fresh chives
  • Salt to taste
  • 1/2 teaspoon black pepper
  • Cooking spray or melted butter for greasing

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a muffin tin with cooking spray or butter.
  2. In a large bowl, combine mashed potatoes, eggs, cheddar cheese, Parmesan cheese, sour cream, chives, salt, and pepper. Mix until well combined.
  3. Spoon the mixture evenly into the prepared muffin tin, filling each cup almost to the top.
  4. Bake for 20–25 minutes, or until the tops are golden brown and slightly crispy.
  5. Allow to cool for 5 minutes before carefully removing from the muffin tin. Serve warm.

Notes

  • Leftover mashed potatoes work best for this recipe.
  • You can substitute cheddar with mozzarella or Monterey Jack cheese.
  • Add cooked bacon bits for extra flavor if desired.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven or air fryer to maintain crispiness.
