Ingredients
1 cup unsalted butter, softened
1 cup vegetable oil
1 cup granulated sugar
1 cup powdered sugar
2 large eggs
1 tsp almond extract
4 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp cream of tartar
1 cup chopped maraschino cherries, drained
Instructions
Preheat your oven to 375°F (190°C).
In a large mixing bowl, cream together the butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy.
Beat in the eggs one at a time, then add the almond extract.
In a separate bowl, whisk together the flour, baking soda, and cream of tartar.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Gently fold in the chopped maraschino cherries.
Drop dough by rounded tablespoonfuls onto ungreased baking sheets. Flatten slightly with the bottom of a glass dipped in sugar.
Bake for 8-10 minutes, or until the edges are lightly golden.
Allow cookies to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
