Ingredients

  • For the Cookie Bars:
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • For the Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or grease it.
  2. In a large bowl, cream together peanut butter, softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time until fully incorporated.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  5. Spread the batter evenly in the prepared pan.
  6. Bake for 20-25 minutes, until the edges are golden and the center is set but still soft.
  7. While bars bake, mix powdered sugar, milk, and vanilla extract in a bowl until smooth to make the glaze. Adjust milk for desired consistency.
  8. Remove bars from oven and immediately drizzle or spread the glaze over the warm bars.
  9. Allow bars to cool completely before slicing and serving.
