Cheesy, golden quesadillas filled with seasoned chicken, creamy avocado, and melty cheese — a quick, satisfying meal perfect for lunch or dinner.

Ingredients

  • 2 cups cooked chicken, shredded (rotisserie works great)
  • 1 ripe avocado, sliced or mashed
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1/4 cup red onion, thinly sliced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 4 large flour tortillas
  • 1 tablespoon olive oil or butter (for cooking)
  • Salsa, sour cream, or guacamole (for serving)

Instructions

  • In a bowl, mix chicken with chili powder, cumin, and salt.
  • Heat a skillet over medium heat and lightly grease with olive oil or butter.
  • Place a tortilla on the skillet, sprinkle half with cheese, then layer chicken, avocado, onion, and cilantro. Top with more cheese.
  • Fold tortilla in half and cook 2–3 minutes per side until golden and cheese is melted.
  • Repeat with remaining tortillas.
  • Slice into wedges and serve warm with salsa, sour cream, or guacamole.

Notes

  • Use mashed avocado for creaminess or slices for texture.
  • Add jalapeños for heat or bell peppers for crunch.
  • Works with whole wheat or corn tortillas too.
