This cozy Chicken Cobbler is a hearty comfort food dish made with tender chicken, vegetables, a creamy sauce, and a buttery biscuit topping that bakes up golden and delicious. It’s like chicken pot pie but with an easy cobbler-style crust!

Ingredients

  • 2 cups cooked chicken, shredded (rotisserie works great)
  • 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups chicken broth
  • 1/2 cup unsalted butter, melted
  • 2 cups Bisquick baking mix (or similar)
  • 2 cups milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and black pepper, to taste

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  • Spread shredded chicken evenly across the bottom of the dish. Add frozen vegetables on top.
  • In a small bowl, whisk together cream of chicken soup and chicken broth. Pour evenly over the chicken and veggies.
  • In another bowl, whisk together melted butter, Bisquick mix, milk, and seasonings until smooth. Pour this mixture evenly over the dish. (Do not stir.)
  • Bake uncovered for 45–50 minutes, or until the top is golden brown and cooked through.
  • Let cool slightly before serving.

Notes

  • For extra flavor, stir some shredded cheddar cheese into the biscuit mix.
  • Add cooked bacon or ham for a smoky twist.
  • Best enjoyed warm and fresh out of the oven.
