Ingredients

Chicken:

  • 1 lb boneless, skinless chicken breasts
  • 1 ½ teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon garlic-infused olive oil

Pasta:

  • 12 oz gluten-free farfalle pasta

Sauce:

  • 2 tablespoons unsalted butter
  • 2 tablespoons minced garlic
  • 1 tablespoon dried shallots
  • 1 tablespoon gluten-free all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  • Cook the Pasta: Boil the pasta according to package instructions until al dente. Drain and set aside.
  • Season and Cook the Chicken: Mix paprika, garlic powder, thyme, salt, and pepper in a bowl. Pound the chicken breasts to an even thickness and season both sides with the spice mixture. Heat olive oil in a large skillet over medium heat. Cook the chicken for 5-7 minutes per side until golden brown and fully cooked. Remove from the skillet, let rest for a few minutes, then dice into bite-sized pieces.
  • Prepare the Sauce: In the same skillet, melt butter over medium heat. Sauté minced garlic and dried shallots until fragrant, about 1-2 minutes. Sprinkle in the flour and cook, stirring constantly, for another minute. Gradually whisk in chicken broth and heavy cream, bringing the mixture to a simmer. Stir in Parmesan cheese and Italian seasoning until the cheese has melted and the sauce has thickened. Season with salt and pepper to taste.
  • Combine: Add the cooked pasta and diced chicken to the sauce. Toss to ensure everything is evenly coated. Serve warm, garnished with additional Parmesan if desired.

Notes

  • For a dairy-free version, substitute heavy cream and Parmesan with plant-based alternatives.
  • Feel free to add vegetables like spinach or broccoli for extra nutrition.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of broth or cream to loosen the sauce if necessary.
