Ingredients

  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, diced
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 8 oz fettuccine or pasta of choice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Season diced chicken with salt, pepper, and Italian seasoning, then cook until golden and cooked through. Remove and set aside.
  4. In the same skillet, melt butter and sauté garlic for 1 minute until fragrant.
  5. Stir in flour and cook for 1-2 minutes to form a roux.
  6. Slowly whisk in chicken broth and heavy cream, bringing the mixture to a simmer.
  7. Add parmesan cheese and stir until melted and the sauce is smooth.
  8. Return chicken to the skillet and add cooked pasta. Toss everything together until well coated.
  9. Garnish with chopped parsley and serve warm.
