These Chicken Quesadillas are a lighter take on the classic Mexican dish, made with seasoned shredded chicken, melted cheese, and crispy tortillas. Perfect for a quick lunch or easy dinner the whole family will love.

Ingredients

  • 1 teaspoon olive oil
  • 1/4 cup chopped onions
  • 1 garlic clove, minced
  • 10 oz cooked shredded chicken breast
  • 1/4 cup diced canned green chiles
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/2 cup shredded reduced-fat Mexican cheese blend
  • 4 low-carb flour tortillas (8-inch)
  • Cooking spray

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onions and garlic, and sauté until softened, about 2 minutes.
  2. Add shredded chicken, green chiles, cumin, salt, and paprika. Stir and cook for 2-3 minutes until heated through. Remove from heat.
  3. Spray a large nonstick skillet with cooking spray and heat over medium heat.
  4. Place a tortilla on the skillet, sprinkle 2 tablespoons cheese on one half, then add 1/4 of the chicken mixture and top with another 2 tablespoons cheese. Fold the tortilla over to form a half-moon shape.
  5. Cook for 2-3 minutes per side until the tortilla is golden brown and the cheese is melted.
  6. Repeat with remaining tortillas and filling.
  7. Cut into wedges and serve warm with your favorite salsa, guacamole, or sour cream if desired.

Notes

  • You can use rotisserie chicken to save time.
  • For added veggies, mix in bell peppers, spinach, or mushrooms with the chicken filling.
  • Use a whole wheat or gluten-free tortilla to match dietary needs.
  • These reheat well in a skillet or air fryer to maintain crispiness.
