A rich and flavorful Chicken Scampi that combines succulent chicken with a garlicky, buttery sauce. Ingredients

  • 2 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional for a kick)
  • 1/2 cup chicken broth
  • 1/4 cup white wine (or chicken broth for non-alcoholic version)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 8 oz pasta (spaghetti or linguine works great)
  • Optional: extra lemon wedges for serving

Instructions

  1. Cook the Pasta: Begin by cooking the pasta according to the package directions. Drain and set aside.
  2. Cook the Chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for about 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Prepare the Scampi Sauce: In the same skillet, add butter. Once melted, add the garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Deglaze: Add the white wine and chicken broth to the skillet. Scrape the bottom of the skillet to release any browned bits (this adds flavor).
  5. Finish the Sauce: Stir in the lemon juice, zest, and Parmesan cheese. Let the sauce simmer for 3-4 minutes until it thickens slightly.
  6. Combine: Slice the cooked chicken into thin strips. Add the chicken and pasta to the skillet, tossing to coat the pasta and chicken in the sauce.
  7. Garnish and Serve: Sprinkle chopped parsley over the top and serve with extra lemon wedges on the side, if desired.

  • For a creamier sauce, you can add 1/4 cup of heavy cream after adding the broth and wine.
