These Chicken Shawarma Bowls are a healthy and flavorful meal, featuring spiced grilled chicken, rice, fresh veggies, and a creamy yogurt sauce. Perfect for meal prep or a quick weeknight dinner.

Ingredients

  • 2 lbs boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon ground paprika
  • 1 teaspoon ground turmeric
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, minced
  • Juice of 1 lemon
  • 1/2 cup plain Greek yogurt
  • 2 cups cooked rice or couscous
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1/2 cup hummus
  • 1/2 cup tzatziki or garlic yogurt sauce

Instructions

  1. In a large bowl, whisk together olive oil, cumin, coriander, paprika, turmeric, cinnamon, cayenne, salt, pepper, garlic, lemon juice, and Greek yogurt.
  2. Add chicken thighs and toss to coat. Cover and marinate in the fridge for at least 1 hour or up to 24 hours.
  3. Preheat grill or skillet over medium-high heat. Cook the chicken for about 5-6 minutes per side, or until fully cooked.
  4. Remove from heat and let rest for a few minutes, then slice into strips.
  5. Assemble bowls by adding cooked rice or couscous as the base.
  6. Top with grilled chicken, cherry tomatoes, cucumber, red onion, and parsley.
  7. Add a dollop of hummus and drizzle with tzatziki or garlic yogurt sauce.
  8. Serve immediately or store in meal prep containers for later.
