These Chicken Taco Cups are a fun and easy appetizer made with tortillas, shredded chicken, and classic taco toppings. Perfect for game day, parties, or family-friendly dinners, they’re baked in muffin tins for a crispy, handheld snack everyone will love.

Ingredients

  • 6 small flour tortillas
  • 1 cup cooked shredded chicken
  • 1/2 cup salsa
  • 1/2 teaspoon taco seasoning
  • 1/2 cup shredded Mexican cheese blend
  • 1/4 cup sour cream (optional)
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup sliced green onions

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut each tortilla into quarters and press two overlapping quarters into each cup of a standard muffin tin to form a cup shape.
  3. In a bowl, mix the shredded chicken with salsa and taco seasoning.
  4. Spoon the chicken mixture evenly into the tortilla cups.
  5. Sprinkle shredded cheese on top of each cup.
  6. Bake for 10-12 minutes, or until the edges of the tortillas are golden and crispy.
  7. Remove from the oven and let cool for a few minutes.
  8. Top with sour cream, tomatoes, cilantro, and green onions before serving.

Notes

  • You can substitute the chicken with ground beef or black beans for a different filling.
  • Use a biscuit cutter to make perfect tortilla circles if desired.
  • These taco cups are great served warm or at room temperature.
