A fresh and flavorful chickpea feta avocado salad packed with protein-rich chickpeas, creamy avocado, tangy feta, and a zesty lemon dressing. Perfect as a light lunch, side dish, or healthy meal prep option.

Ingredients

  • 2 cups canned chickpeas, drained and rinsed
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large mixing bowl, combine the drained chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
  2. Add the diced avocado and crumbled feta cheese to the bowl.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  4. Pour the dressing over the salad and gently toss until everything is evenly coated.
  5. Taste and adjust seasoning if needed. Serve immediately or chill for 15–20 minutes before serving.

Notes

  • For extra flavor, add a pinch of dried oregano or chili flakes.
  • To keep the avocado fresh, add it just before serving.
