Chili Lime Tofu Peach Skewers are a vibrant, plant-based summer dish featuring spicy marinated tofu and sweet peaches grilled to perfection. Served with a creamy avocado-lime sauce, these skewers are packed with flavor and perfect for warm-weather gatherings.

Ingredients

  • 1 block (14 oz) extra-firm tofu, drained and pressed
  • 2 large ripe peaches, pitted and cut into wedges
  • 1 tbsp avocado oil (or olive oil)
  • 1 tbsp lime juice
  • 1 tbsp soy sauce or tamari
  • 2 tsp maple syrup
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • Wooden or metal skewers
  • Optional: fresh cilantro and lime wedges for garnish

Instructions

  1. Drain and press the tofu for at least 30 minutes to remove excess moisture. Cut into 1-inch cubes.
  2. In a bowl, whisk together avocado oil, lime juice, soy sauce, maple syrup, chili powder, smoked paprika, garlic powder, and salt to make the marinade.
  3. Add tofu cubes to the marinade and toss to coat. Let sit for at least 30 minutes (or up to 2 hours in the fridge).
  4. Meanwhile, slice peaches into wedges and soak wooden skewers in water if using.
  5. Preheat a grill or grill pan to medium-high heat. Assemble skewers by alternating marinated tofu and peach slices.
  6. Grill skewers for 2 to 3 minutes per side, or until tofu is charred and peaches are tender.
  7. Serve with optional garnishes like fresh cilantro and lime wedges, and drizzle with avocado-lime sauce if desired.

Notes

  • Use firm, ripe peaches that hold their shape when grilled.
  • If using wooden skewers, soak them for at least 30 minutes to prevent burning.
  • Avocado-lime sauce can be prepared ahead and stored in the fridge.
  • Tofu can be marinated overnight for deeper flavor.
