Make a delicious Chipotle Chicken Wrap at home with marinated chicken thighs, crispy tortilla, melty mozzarella, and a creamy chipotle yogurt sauce. This flavorful wrap is perfect for lunch or dinner, with a smoky and spicy kick balanced by a cool and creamy sauce.

Ingredients

  • For the chicken:
  • 2 lb boneless chicken thighs, cut into cubes
  • 67 tortilla wraps
  • 68 chipotle peppers in adobo sauce (adjust according to taste)
  • 34 garlic cloves
  • Salt to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 12 tbsp lemon juice
  • 3 tbsp oil
  • 1 cup mozzarella cheese
  • 1 red onion, chopped
  • 1 cup mixed bell peppers, chopped
  • 1 cup Romaine Lettuce, chopped
  • For the chipotle yogurt sauce:
  • 56 tbsp yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 1/2 tbsp reserved chipotle sauce (from the marinade)
  • 1 tbsp freshly chopped parsley

Instructions

  • Make the marinade: Add chipotle peppers, garlic cloves, lemon juice, salt, and pepper in a food processor. Blend until smooth. Reserve 1 1/2 tbsp of the marinade for the chipotle sauce.
  • Marinate the chicken: In a bowl, add the chicken and pour the remaining marinade over it. Add oil and mix well. Let it marinate for at least 30 minutes.
  • Cook the chicken: Heat a skillet over medium-high heat. Add the marinated chicken and cook until browned and fully cooked through.
  • Make the chipotle yogurt sauce: In a bowl, combine yogurt, mayonnaise, lemon juice, salt, pepper, garlic powder, and the reserved chipotle sauce. Mix well and stir in chopped parsley.
  • Assemble the wrap: Place the cooked chicken, mozzarella cheese, chipotle yogurt sauce, red onion, bell peppers, and Romaine lettuce on a tortilla wrap.
  • Toast the wrap: Place the assembled wrap on a warm skillet over medium heat. Cook for about 2-3 minutes on each side, until the tortilla is crispy, golden brown, and the cheese is melted.
  • Serve: Remove from the skillet, slice, and serve hot.

Notes

  • Adjust the heat level of the wrap by increasing or decreasing the number of chipotle peppers.
