Chocolate Lava Cakes

These rich and decadent chocolate lava cakes feature a warm, gooey chocolate center. They’re surprisingly easy to make and perfect for a special occasion or a quick chocolate fix.

Ingredients

  • 4 oz (113g) semi-sweet chocolate, coarsely chopped
  • 1/2 cup (115g) unsalted butter
  • 1 cup (120g) powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon pure vanilla extract
  • 1/2 cup (60g) all-purpose flour
  • Optional toppings: ice cream, whipped cream, fresh berries, chocolate sauce

Instructions

  1. Preheat oven to 425°F (218°C). Grease four 6-ounce ramekins with butter and lightly dust with cocoa powder. Place on a baking sheet.
  2. Melt the butter and chopped chocolate together in the microwave in 30-second increments, stirring after each until smooth. Let it cool slightly.
  3. Whisk the powdered sugar into the chocolate mixture until combined.
  4. Add the eggs and egg yolks, whisking until smooth. Stir in the vanilla extract.
  5. Gently fold in the flour until just combined.
  6. Divide the batter evenly among the prepared ramekins.
  7. Bake for 12–14 minutes, until the edges are firm but the centers are soft.
  8. Let cakes cool for 1 minute, then invert onto plates and serve immediately with desired toppings.

Notes

  • These cakes are best served immediately for the gooey center.
  • You can make the batter ahead of time and refrigerate for up to 1 day.
  • Don’t overbake or you’ll lose the molten center.
  • You can also freeze unbaked cakes and bake directly from frozen, adding 1–2 minutes to the bake time.
