Ingredients

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • ½ cup vegetable oil or melted coconut oil
  • 2 teaspoons vanilla extract
  • 2 cups grated zucchini (about 1 medium zucchini)
  • ½ cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cocoa powder, and cinnamon.
  3. In a separate large bowl, beat the eggs, granulated sugar, brown sugar, and oil until smooth. Stir in the vanilla extract.
  4. Add the grated zucchini to the wet ingredients and mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix.
  6. If using chocolate chips, fold them into the batter.
  7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

  • Make sure to squeeze excess moisture out of the zucchini using a clean kitchen towel or cheesecloth before adding it to the batter. This will ensure the bread is not too watery.
  • You can substitute the oil with applesauce for a lighter version.
