Ingredients

  • 8 oz noodles (your choice, such as rice noodles, spaghetti, or soba)
  • 2 tbsp olive oil or vegetable oil
  • 1/4 cup fresh cilantro, finely chopped
  • Zest and juice of 1 lime
  • 2 cloves garlic, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Red pepper flakes (optional for heat)
  • 1 tbsp sesame oil (optional for added depth)

Instructions

  • Cook the noodles: In a large pot of boiling salted water, cook the noodles according to the package instructions. Drain and set aside.
  • Prepare the sauce: In a large pan, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
  • Toss the noodles: Add the cooked noodles to the pan and toss to coat in the oil and garlic. Stir in the lime juice, lime zest, and fresh cilantro.
  • Season: Add salt and pepper to taste. If you like a little spice, sprinkle in some red pepper flakes. For a richer flavor, you can add sesame oil at this stage.
