This Cilantro Lime Vinaigrette is a vibrant, tangy, and slightly spicy dressing made with fresh cilantro, lime juice, garlic, and a hint of honey. Perfect for salads, grilled vegetables, or as a marinade.

Ingredients

  • 1 cup lightly packed fresh cilantro leaves
  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 2 cloves garlic, peeled
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Add the cilantro, olive oil, lime juice, rice vinegar, honey, garlic, salt, black pepper, and red pepper flakes (if using) to a blender or food processor.
  2. Blend until smooth and well combined.
  3. Taste and adjust seasoning, adding more salt, honey, or lime juice as desired.
  4. Transfer to a jar or airtight container and refrigerate until ready to use.
  5. Shake well before each use.

Notes

  • This vinaigrette can be stored in the refrigerator for up to a week.
  • Use as a salad dressing, marinade, or drizzle over grilled vegetables or tacos.
  • For a spicier version, add more red pepper flakes or a small piece of jalapeño.
