Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 2 tablespoons brewed coffee (cooled)

Instructions

  • Prep the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  • Cream Butter and Sugar: In a large bowl, cream together the softened butter and brown sugar until light and fluffy. This should take about 3-4 minutes.
  • Add Wet Ingredients: Beat in the egg, brewed coffee, and vanilla extract until combined.
  • Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be soft and slightly sticky.
  • Shape the Cookies: In two separate shallow bowls, place the granulated sugar in one and the powdered sugar in the other. Scoop out tablespoon-sized portions of dough, roll them into balls, and first coat them in the granulated sugar. Then roll them in the powdered sugar, ensuring they’re well-coated.
  • Bake: Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are set and the cookies have crinkled.
