Ingredients

  • 1 ½ cups graham cracker crumbs
  • 2 tbsp sugar
  • ¼ cup melted butter
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 1 cup cinnamon roll dough (pre-made or homemade)
  • 1 cup honeybun glaze (or homemade)
  • ¼ cup brown sugar
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan and set aside.
  2. In a small bowl, mix the graham cracker crumbs, sugar, and melted butter. Press this mixture evenly into the bottom of the prepared pan. Bake for 8 minutes, then remove and let cool.
  3. In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy. Add in the sour cream, eggs, and vanilla extract, mixing well.
  4. Stir in the ground cinnamon until fully incorporated.
  5. Pour half of the cheesecake batter over the crust in the pan.
  6. Cut the cinnamon roll dough into small pieces and scatter them on top of the batter.
  7. Add the remaining cheesecake batter, smoothing it over the cinnamon rolls.
  8. Swirl the cinnamon roll dough pieces into the batter using a knife or toothpick.
  9. Bake for 55-60 minutes, or until the center is set and only slightly jiggly.
  10. Allow the cheesecake to cool in the pan for 1 hour before transferring to the refrigerator to chill for at least 4 hours or overnight.
  11. Before serving, drizzle the honeybun glaze and sprinkle the brown sugar over the top for a sticky-sweet finish.

Notes

  • For a thicker glaze, use a store-bought honeybun glaze or make your own by combining powdered sugar, milk, and a pinch of cinnamon.
