Ingredients

  • Granulated sugar
  • Brown sugar
  • Ground cinnamon
  • All-purpose flour
  • Baking powder
  • Salt
  • Butter
  • Eggs
  • Vanilla extract
  • Powdered sugar (optional, for glaze)
  • Milk (optional, for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix brown sugar and cinnamon for the filling; set aside.
  3. Cream butter and granulated sugar until light and fluffy.
  4. Add eggs and vanilla extract; mix well.
  5. Combine flour, baking powder, and salt in a separate bowl, then gradually mix into the wet ingredients to form a soft dough.
  6. Roll the dough into a 1/4-inch thick rectangle on a floured surface.
  7. Spread the cinnamon-sugar filling evenly over the dough.
  8. Roll the dough tightly into a log, then chill for 30 minutes.
  9. Slice the chilled log into 1/2-inch rounds and place on the baking sheet.
  10. Bake for 10-12 minutes, or until edges are golden. Cool completely.
  11. For glaze (optional): Mix powdered sugar and milk, then drizzle over cookies before serving.

Notes

  • Ensure the dough is well-chilled before baking to prevent spreading.
  • Experiment with variations like adding nuts, using a cream cheese glaze, or adding extra spices for a unique twist.
  • The cookies freeze well and can be baked straight from frozen—add 1-2 minutes to the bake time.
