A moist banana bread with a sweet cinnamon sugar swirl running through the center and top. This comforting loaf is rich with ripe bananas and warm cinnamon flavor, perfect for breakfast or a snack.

Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup granulated sugar (for cinnamon swirl)
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a large bowl, mash the bananas until mostly smooth.
  3. Add the melted butter, 3/4 cup sugar, egg, and vanilla extract. Stir until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Add the dry ingredients to the banana mixture and stir until just combined.
  6. In a small bowl, mix 1/3 cup sugar and the cinnamon to make the cinnamon swirl mixture.
  7. Pour half of the batter into the prepared loaf pan and sprinkle half of the cinnamon sugar mixture evenly over the batter.
  8. Add the remaining batter on top and sprinkle the rest of the cinnamon sugar mixture over the surface. Use a knife to gently swirl it through the batter.
  9. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.

Notes

  • Use very ripe bananas with brown spots for the best sweetness and flavor.
  • Store banana bread tightly wrapped at room temperature for up to 3 days.
  • The loaf can be frozen for up to 2 months; slice before freezing for easy portions.
  • Add chopped walnuts or pecans for extra texture if desired.
