Classic Spinach Lasagna

This classic spinach lasagna is a delicious vegetarian dish layered with a creamy ricotta-spinach mixture, rich tomato sauce, and melted mozzarella cheese. It’s a comforting, hearty meal perfect for family dinners or meal prep.

Ingredients

  • 12 lasagna noodles
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 5 oz fresh spinach (about 5 packed cups)
  • 15 oz whole milk ricotta cheese
  • 1 large egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups marinara sauce (homemade or store-bought)
  • 3 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • Fresh basil, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Cook lasagna noodles according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil and sauté chopped onions for 3-4 minutes. Add garlic and cook for 1 minute.
  3. Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a bowl, mix ricotta cheese, egg, salt, pepper, and the cooked spinach mixture until combined.
  5. In a 9×13 baking dish, spread 1 cup of marinara sauce on the bottom. Layer with 4 noodles, then half of the ricotta mixture, 1 cup marinara, 1 cup mozzarella.
  6. Repeat with another layer of noodles, remaining ricotta mixture, 1 cup marinara, and 1 cup mozzarella.
  7. Add final layer of noodles, remaining marinara sauce, and top with 1 cup mozzarella and 1/2 cup parmesan cheese.
  8. Cover with foil and bake for 25 minutes. Remove foil and bake for another 15-20 minutes until cheese is bubbly and lightly golden.
  9. Let the lasagna rest for 10-15 minutes before slicing. Garnish with fresh basil if desired.

Notes

  • You can use frozen spinach (thawed and drained) instead of fresh if preferred.
  • Letting the lasagna rest helps it hold its shape when sliced.
  • Store leftovers in the fridge for up to 5 days or freeze for longer storage.
