Ingredients

  • Rice (white or brown)
  • Tomato paste
  • Ground beef (85/15 or 90/10)
  • Diced tomatoes
  • Bell peppers (any color)
  • Monterey Jack cheese (or other cheese)
  • Parsley (for garnish)
  • Onion, garlic, oregano, salt, and pepper

Instructions

  • Preheat oven to 400°F. Prepare rice if not already done.
  • Cut tops off bell peppers, remove seeds and core.
  • Sauté onion, garlic, and tomato paste in a skillet.
  • Add ground beef and cook until no longer pink.
