These Coconut Bars are a chewy, sweet treat with a perfect balance of coconut flavor and a hint of vanilla. Easy to make and perfect for snacking, they’re the ultimate homemade dessert bar that everyone will love!

Ingredients

  • 2 cups sweetened shredded coconut
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/2 tsp vanilla extract
  • 1/4 cup sweetened condensed milk
  • Optional: 1/4 cup chocolate chips or chopped nuts (for added flavor)

Instructions

  • Preheat Oven & Prepare Pan:
  • Preheat your oven to 350°F (175°C).
  • Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
  • Mix Dry Ingredients:
  • In a medium bowl, combine the shredded coconut, flour, sugar, baking powder, and salt. Stir until evenly mixed.
  • Prepare Wet Ingredients:
  • In another bowl, whisk together the eggs, melted butter, vanilla extract, and sweetened condensed milk until smooth.
  • Combine Wet and Dry Ingredients:
  • Pour the wet ingredients into the dry ingredients and stir until fully combined. The mixture will be thick and sticky.
  • Bake the Bars:
  • Pour the batter into the prepared baking pan and spread it evenly.
  • Bake for 25-30 minutes, or until the edges are golden brown, and a toothpick inserted into the center comes out clean.
  • Cool and Slice:
  • Allow the coconut bars to cool completely in the pan before slicing into squares or bars.
  • Optionally, drizzle with melted chocolate or sprinkle with extra coconut for decoration.
