Ingredients

  • 4 fish fillets (such as cod, tilapia, or snapper)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup coconut milk
  • Juice of 1 lime
  • Zest of 1 lime
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  • Prepare the Fish: Season the fish fillets with salt and pepper on both sides.
  • Cook the Fish: In a large skillet, heat olive oil over medium-high heat. Add the fish fillets and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.
  • Make the Garlic Butter Sauce: In the same skillet, add butter and minced garlic. Sauté for 1-2 minutes until the garlic becomes fragrant and golden.
  • Coconut Lime Sauce: Pour in the coconut milk and lime juice, scraping up any browned bits from the bottom of the pan. Stir to combine and let it simmer for 2-3 minutes, allowing the sauce to thicken slightly.
  • Finish the Dish: Return the fish to the skillet, spooning the coconut-lime sauce over the fillets. Sprinkle lime zest on top, and garnish with fresh cilantro before serving.
  • Serve: Pair with steamed rice or a fresh salad for a complete meal.

Notes

  • For a spicier version, you can add a pinch of chili flakes or a chopped chili pepper to the sauce.
  • Feel free to swap the fish fillets with your favorite white fish.
  • The sauce can be made ahead and stored in the fridge for up to 2 days.
