Easy to make, these cookies offer a melt-in-your-mouth texture that everyone will love!

Ingredients

  • 1 cup unsalted butter (softened)
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • 1/2 cup dried cranberries (chopped)
  • 1/4 teaspoon orange extract (optional, for extra flavor)

Instructions

  1. Prep the dough: In a large mixing bowl, cream together the butter and powdered sugar until light and fluffy. Add the vanilla extract and orange zest and mix until combined.
  2. Add dry ingredients: Gradually add the flour and salt, mixing until the dough starts to come together.
  3. Add cranberries: Stir in the chopped dried cranberries and mix until evenly distributed.
  4. Form the dough: Turn the dough onto a floured surface, divide it in half, and shape each half into a log or disc. Wrap each in plastic wrap and refrigerate for at least 1 hour.
  5. Slice and bake: Preheat your oven to 350°F (175°C). Once chilled, slice the dough into 1/4-inch thick rounds and place them on a parchment-lined baking sheet.
  6. Bake: Bake for 10-12 minutes or until the edges of the cookies begin to turn golden. Cool completely on a wire rack.

Notes

  • For extra flavor, consider dipping the cooled cookies in white chocolate.

  • You can freeze the dough logs for up to 3 months if you prefer to bake them later.
