Ingredients

  • 1 ½ cups mashed ripe bananas (about 3 bananas)
  • ½ cup sour cream
  • ¼ cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 8 oz cream cheese, softened

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, mix mashed bananas, sour cream, oil, sugar, eggs, and vanilla until well combined.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually mix into the wet ingredients until fully incorporated.
  4. Beat cream cheese in a separate bowl until smooth.
  5. Pour half the banana batter into the prepared loaf pan. Spread the cream cheese over the batter, then top with the remaining banana batter.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use extra ripe bananas for the best flavor and sweetness.
  • Ensure cream cheese is softened for easier spreading.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • Enjoy warm with a spread of butter or extra cream cheese!
