  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 can (14.5 oz) diced tomatoes, drained (optional for added flavor)
  • 1/2 cup milk (or heavy cream for a richer texture)
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper, to taste
  • Fresh parsley or basil for garnish (optional)
  • Additional shredded mozzarella or Parmesan cheese for topping (optional)

Instructions

  • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or casserole dish.
  • Cook the pasta according to the package directions, then drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
  • In a separate bowl, mix together the softened cream cheese, 1 cup of mozzarella, 1/2 cup of Parmesan cheese, milk (or heavy cream), oregano, basil, salt, and pepper. Stir until the mixture is smooth and creamy.
  • Add the cooked pasta to the skillet with the onions and garlic, and stir in the cream cheese mixture, making sure the pasta is well-coated.
  • If using diced tomatoes, stir them in at this point.
  • Transfer the pasta mixture into the prepared baking dish. Sprinkle extra mozzarella or Parmesan cheese on top if desired.
  • Bake for 20-25 minutes, or until the cheese is bubbly and golden brown on top.
  • Garnish with fresh parsley or basil before serving.
