Creamed Corn Orzo with Salmon

A rich and comforting dish of creamed corn orzo paired with perfectly seared salmon. This creamy pasta with sweet corn and tender fish makes for a satisfying meal any time of the year. Easy to make and bursting with flavor, it’s a dinner winner!

Ingredients

  • 1 cup orzo pasta
  • 1 tablespoon olive oil
  • 2 salmon fillets
  • Salt and pepper, to taste
  • 2 tablespoons butter
  • 1 cup fresh corn kernels (or frozen)
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth (or vegetable broth)
  • 1/4 cup grated Parmesan cheese
  • 1 garlic clove, minced
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)
  • Zest of 1 lemon

Instructions

  • Cook the Orzo:
    Boil a large pot of salted water and cook the orzo according to package instructions until al dente. Drain and set aside.
  • Prepare the Salmon:
    Season the salmon fillets with salt and pepper. Heat olive oil in a large skillet over medium heat. Once hot, cook the salmon fillets for about 3-4 minutes on each side, or until golden and cooked through. Remove from the skillet and set aside.
  • Make the Creamed Corn:
    In the same skillet, add the butter and let it melt. Add the garlic and cook for about 1 minute until fragrant. Stir in the corn and cook for another 3-4 minutes, allowing it to soften. Add the chicken broth and heavy cream, then simmer for 2-3 minutes until the mixture thickens slightly.
  • Combine:
    Stir in the cooked orzo, Parmesan cheese, and lemon zest into the creamed corn mixture. Mix until the pasta is well-coated. Season with salt and pepper to taste.
  • Serve:
    Flake the salmon into large pieces and serve it over the creamed corn orzo. Garnish with chopped parsley, if desired.

Notes

  • If you prefer a lighter version, you can substitute the heavy cream with half-and-half or use a dairy-free alternative.
  • You can also add a squeeze of lemon juice for extra brightness.
  • For extra flavor, try adding a pinch of red pepper flakes to the creamed corn for a little heat.
