Ingredients

  • 1 lb penne pasta
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 2 cups fresh broccoli florets
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons butter
  • Fresh parsley for garnish (optional)

Instructions

  • Cook the Pasta: Cook the penne pasta according to the package instructions. Drain and set aside.
  • Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and cook for 6-8 minutes, stirring occasionally, until fully cooked through and golden brown. Remove the chicken from the skillet and set aside.
  • Steam the Broccoli: In a separate pot, steam the broccoli florets until tender (about 4-5 minutes). Drain and set aside.
  • Make the Creamy Sauce: In the same skillet, melt the butter over medium heat. Add the garlic powder and onion powder, and cook for 1 minute until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer and cook for 3-5 minutes until the sauce begins to thicken slightly.
  • Add Cheese: Stir in the Parmesan cheese and continue to cook, stirring frequently, until the cheese is fully melted and the sauce is smooth.
  • Combine Everything: Add the cooked chicken, steamed broccoli, and penne pasta into the skillet. Toss everything together to coat evenly in the creamy sauce.
  • Serve: Garnish with a sprinkle of red pepper flakes (if using) and fresh parsley. Serve warm.

  • You can swap the broccoli for other vegetables like spinach or peas if preferred.
