Creamy Cajun Shrimp & Rice is a bold and flavorful one-pan meal featuring juicy shrimp coated in a zesty Cajun cream sauce, served over tender, fluffy rice. It’s a comforting and satisfying dish with just the right amount of spice.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion, diced
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 2 cups cooked white or brown rice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the shrimp with Cajun seasoning and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 1–2 minutes per side until just pink and cooked through. Remove shrimp and set aside.
  3. In the same skillet, add butter, diced onion, and bell pepper. Sauté for 3–4 minutes until soft.
  4. Add garlic and smoked paprika. Cook for another 1 minute until fragrant.
  5. Pour in the heavy cream and chicken broth. Bring to a simmer and cook for 3–5 minutes, allowing the sauce to slightly thicken.
  6. Stir in Parmesan cheese and mix until melted and smooth. Season with salt and pepper to taste.
  7. Return the shrimp to the skillet and toss to coat in the sauce. Simmer for 1–2 minutes to warm through.
  8. Serve over cooked rice and garnish with chopped fresh parsley.

Notes

  • Adjust Cajun seasoning to taste depending on spice preference.
  • For a lighter version, use half-and-half instead of heavy cream.
  • Can be made with pre-cooked rice for a quick weeknight meal.
  • Use shrimp with tails removed for easier eating.
