Ingredients

  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • Salt and pepper to taste
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 package (about 16 oz) gnocchi
  • 2 cups spinach (optional)
  • Fresh parsley for garnish (optional)

Instructions

  • Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, and cook for about 5-6 minutes until browned on all sides. Remove chicken and set aside.
  • In the same skillet, add chopped onion and garlic. Sauté until softened, about 2-3 minutes.
  • Pour in chicken broth and bring to a simmer, scraping the bottom of the pan to release any browned bits.
  • Add the heavy cream and Parmesan cheese, stirring until the sauce thickens, about 5 minutes.
  • Meanwhile, cook the gnocchi according to package directions and drain.
  • Add the cooked gnocchi and chicken back to the skillet, stirring to coat in the creamy sauce. If desired, stir in spinach until wilted.
  • Garnish with fresh parsley before serving.

Notes

  • You can substitute spinach with kale or arugula for a different flavor profile.
  • For a lighter version, use half-and-half instead of heavy cream.
  • The sauce thickens as it cools, so it’s best served immediately.
