Ingredients

  • 2 chicken breasts, sliced into strips
  • 8 oz pasta (penne, fettuccine, or your choice)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente, then drain and set aside.
  • Cook the Chicken: While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add sliced chicken breasts and season with salt, pepper, and dried basil. Cook until the chicken is golden and cooked through (about 5-7 minutes). Remove from the skillet and set aside.
  • Make the Sauce: In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in chicken broth, scraping up any bits from the bottom of the skillet. Bring to a simmer, then add the heavy cream and Parmesan cheese. Stir until the sauce thickens (about 3-5 minutes).
  • Combine: Return the chicken to the skillet, and stir in the cooked pasta. Toss until well coated with the creamy sauce. Adjust seasoning with salt and pepper to taste.
  • Serve: Garnish with fresh parsley and serve immediately.

Notes

  • You can swap the heavy cream for half-and-half for a lighter version of the sauce.
  • For added flavor, try incorporating spinach or sun-dried tomatoes into the sauce.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
