Ingredients

  • 1 lb chicken sausage (sliced)
  • 1 cup orzo pasta
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper (to taste)
  • 1 tsp Italian seasoning
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the sliced chicken sausage and cook until browned, about 5-6 minutes. Remove and set aside.
  2. In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Add garlic and cook for another 1 minute until fragrant.
  3. Stir in the orzo pasta and cook for 1-2 minutes, letting it toast slightly.
  4. Pour in the chicken broth and bring to a simmer. Cover and cook for 8-10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
  5. Reduce heat to low and stir in the heavy cream, Parmesan cheese, and Italian seasoning. Return the cooked sausage to the pan and stir to combine.
  6. Season with salt and pepper to taste. Cook for another 2-3 minutes until creamy and heated through.
  7. Garnish with fresh parsley before serving.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or whole milk.
  • Add spinach or kale for extra greens and nutrition.
  • Use gluten-free orzo if needed to make the recipe gluten-free.
