This creamy garlic skillet chicken with spinach is a quick and comforting one-pan meal. Juicy seared chicken breasts are simmered in a rich garlic-parmesan sauce with tender baby spinach, perfect for a weeknight dinner.
Sprinkle chicken with 1/4 teaspoon each salt and pepper. Heat oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 3 to 4 minutes per side. Transfer to a plate.
Reduce heat to medium. Add garlic to the skillet and cook, stirring constantly, until fragrant, about 30 seconds. Add flour and cook, stirring, for 1 minute.
Gradually whisk in chicken broth and half-and-half. Bring to a simmer and cook until slightly thickened, 2 to 3 minutes.
Stir in spinach and cook until wilted, about 1 to 2 minutes. Stir in Parmesan and the remaining 1/4 teaspoon each salt and pepper.
Return the chicken to the skillet and turn to coat with the sauce. Cook until heated through, about 1 to 2 minutes. Serve warm.
Notes
To make it lower in fat, use low-fat milk instead of half-and-half.
