A light and airy keto-friendly dessert combining sugar-free Jello with whipped cream for a deliciously creamy, low-carb treat.

Ingredients

  • 1 (.3 oz) package sugar-free Jello (any flavor)
  • ¾ cup boiling water
  • 1 cup ice water
  • 1 cup heavy whipping cream
  • 1 tablespoon powdered sweetener (e.g., Swerve Confectioners)

Instructions

  1. In a medium-sized bowl, dissolve the Jello powder in ¾ cup boiling water, stirring until fully dissolved.
  2. Measure 1 cup of ice, then fill the remaining space with water to make 1 cup of ice water. If using GramZero brand Jello, use 1 cup of cold water instead.
  3. Stir the ice water into the dissolved Jello until the mixture cools and the ice cubes are mostly melted. Remove any unmelted ice cubes. The Jello will begin to soft set during this time.
  4. In a large bowl, use an electric mixer to whip the heavy whipping cream and powdered sweetener until stiff peaks form.
  5. Gradually whip the soft-set Jello into the whipped cream until fully combined.
  6. Divide the mixture into 4 custard cups or pour into a medium-sized bowl. Refrigerate for at least 2 hours before serving.

Notes

  • You can use any flavor of sugar-free Jello for variety.
  • For best texture, make sure the Jello is just starting to set before mixing into whipped cream.
  • Refrigerate leftovers in an airtight container.
  • Use a powdered sweetener for best texture; granulated may be gritty.
