This creamy white chicken chili is a comforting and rich dish, packed with rotisserie chicken, beans, green chiles, and a creamy blend of sour cream and heavy whipping cream. It’s perfect for busy nights and can be made on the stovetop, in a slow cooker, or Instant Pot.

Ingredients

  • 1 lb rotisserie chicken, shredded
  • 1 medium onion, chopped
  • 1 ½ tsp garlic powder
  • 1 tbsp olive oil
  • 2 cans Great Northern Beans (15 oz each), drained and rinsed
  • 14 ½ oz chicken broth
  • 2 cans chopped green chiles (4 oz each)
  • 1 tsp salt
  • 1 tsp oregano
  • 1 tsp cumin
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper
  • 1 cup sour cream
  • ½ cup heavy whipping cream

Instructions

  • Sauté onion and garlic powder in olive oil until translucent.
  • Add chicken, beans, chicken broth, chiles, and seasonings, then bring to a boil.
  • Simmer for 30 minutes, then stir in sour cream and heavy cream.
  • Top with optional garnishes like cheese, tortilla chips, or lime wedges.
