These crispy baked ground turkey tacos are a healthier twist on traditional tacos, filled with seasoned ground turkey, topped with melted cheese, and baked in the oven for a crunchy finish. Served with a creamy avocado sauce for dipping or drizzling.

Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup tomato paste
  • 1/2 cup water
  • 8 small corn tortillas
  • 1 to 1 1/2 cups shredded cheese (cheddar or Mexican blend)
  • Cooking spray or additional olive oil for brushing
  • 1 avocado
  • 1/4 cup sour cream or Greek yogurt
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro
  • Salt to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Heat olive oil in a skillet over medium heat. Add diced onion and cook until softened, about 3 minutes.
  3. Add garlic and cook for another 30 seconds.
  4. Add ground turkey to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  5. Stir in chili powder, cumin, paprika, oregano, salt, and pepper. Mix well.
  6. Add tomato paste and water. Stir and simmer for 5 minutes until thickened. Remove from heat.
  7. Warm tortillas slightly to make them pliable (in microwave or skillet).
  8. Place tortillas on the prepared baking sheet. Add 2-3 tablespoons of turkey mixture and a sprinkle of cheese to one side of each tortilla. Fold over to form a taco.
  9. Lightly brush or spray the tops of the tacos with olive oil or cooking spray.
  10. Bake for 10-12 minutes, flip tacos, then bake another 5-8 minutes or until crispy and golden.
  11. Meanwhile, make the avocado sauce: in a blender or food processor, combine avocado, sour cream (or yogurt), lime juice, cilantro, and a pinch of salt. Blend until smooth.
  12. Serve the crispy tacos with the avocado sauce on the side or drizzled on top.

Notes

  • Warm tortillas before filling to prevent cracking.
  • Use Greek yogurt as a lighter alternative to sour cream in the avocado sauce.
  • You can add chopped jalapeños or hot sauce to the turkey filling for extra spice.
  • These tacos are best served immediately for maximum crispiness.
