This Crispy Chicken Caprese combines juicy, crispy chicken breasts with fresh mozzarella, ripe tomatoes, basil, and a balsamic glaze. A delicious twist on the classic Caprese salad, this easy-to-make dish brings together crispy, golden chicken with the vibrant flavors of summer. Perfect for a weeknight dinner or special occasion.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups breadcrumbs (preferably Panko for extra crispiness)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 2 tbsp olive oil (for frying)
  • 1 cup fresh mozzarella, sliced
  • 2 medium tomatoes, sliced
  • 1/4 cup fresh basil leaves
  • 1/4 cup balsamic glaze (or balsamic vinegar reduction)

Instructions

  • Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.
  • Bread the Chicken: Set up a breading station with three shallow dishes. In the first dish, add flour. In the second dish, add the beaten eggs. In the third dish, combine breadcrumbs and grated Parmesan cheese. Coat each chicken breast in flour, then dip in the egg mixture, and finally coat with the breadcrumb mixture, pressing gently to adhere.
  • Fry the Chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, carefully place the breaded chicken breasts in the skillet and cook for 4-5 minutes per side, or until golden brown and crispy. Ensure the chicken is fully cooked (internal temperature should reach 165°F/75°C). Remove the chicken from the skillet and set it aside on a plate lined with paper towels to drain any excess oil.
  • Assemble the Caprese: Top each crispy chicken breast with slices of fresh mozzarella and tomato.
  • Finish with Basil and Glaze: Place the assembled chicken breasts under the broiler for 1-2 minutes to melt the mozzarella. Remove from the oven and garnish with fresh basil leaves. Drizzle with balsamic glaze or balsamic reduction for added flavor.
  • Serve: Serve immediately with your favorite side dishes.

Notes

  • You can substitute the fresh mozzarella with burrata for an even creamier texture.
  • For a lighter version, you can bake the breaded chicken in the oven at 400°F (200°C) for 20-25 minutes, flipping halfway through.
  • Make sure the oil is hot enough before frying to achieve a crispy coating.
