These crispy roasted chickpeas are the perfect healthy snack, packed with protein and crunch! They are seasoned to perfection and make a great gluten-free, vegan alternative to chips or croutons. Enjoy them as a snack or a crunchy topping for salads and soups.

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp smoked paprika (or regular paprika)
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper (optional, for heat)

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Dry the chickpeas thoroughly using a paper towel. Removing excess moisture helps them crisp up.
  • Remove skins (optional but recommended) by gently rubbing the chickpeas with a towel.
  • Toss chickpeas in a bowl with olive oil, salt, garlic powder, paprika, black pepper, and cayenne (if using).
  • Spread chickpeas in a single layer on the baking sheet.
  • Roast for 25-30 minutes, shaking the pan every 10 minutes to ensure even crispiness.
  • Let cool for 10 minutes—chickpeas will crisp up more as they cool.
  • Enjoy immediately or store in an airtight container for up to 3 days.

Notes

  • For extra crispiness, roast for 35 minutes, but watch closely to avoid burning.
  • Experiment with seasonings like curry powder, chili powder, or Italian herbs for different flavors.
  • If chickpeas get soft after storing, reheat in the oven for a few minutes.
