These Crispy Smashed Carrot Bites are a healthy, fun, and flavorful side dish or snack. Roasted until golden and crunchy, they’re seasoned perfectly and served with a tangy dipping sauce.

Ingredients

  • 1 lb carrots (preferably small or medium-sized, peeled)
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated parmesan or vegan cheese (optional)
  • Dipping sauce of choice (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil or steam the peeled carrots until fork-tender, about 10-15 minutes.
  3. Drain the carrots and place them on the prepared baking sheet.
  4. Use the bottom of a glass or mason jar to gently smash each carrot flat, about 1/2 inch thick.
  5. Drizzle the carrots with olive oil and sprinkle with garlic powder, onion powder, smoked paprika, salt, and pepper.
  6. Roast in the oven for 20-25 minutes or until the edges are golden and crispy.
  7. Garnish with chopped parsley and grated parmesan or vegan cheese if desired.
  8. Serve immediately with your favorite dipping sauce.

Notes

  • Choose evenly sized carrots so they cook uniformly.
  • For extra crispiness, broil for an additional 2-3 minutes at the end of roasting.
  • Serve as a side dish, appetizer, or snack.
