This crockpot meatloaf is a hearty and flavorful comfort food classic made easy in a slow cooker. It features a savory blend of ground beef, breadcrumbs, and seasonings, topped with a tangy ketchup-based glaze.

Ingredients

  • 2 pounds ground beef
  • 2 large eggs
  • 2/3 cup milk
  • 3 slices bread, crumbled
  • 1/2 cup chopped onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground sage (optional)
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon dry mustard
  • 1/2 teaspoon Worcestershire sauce

Instructions

  1. In a large bowl, combine ground beef, eggs, milk, crumbled bread, onion, salt, pepper, and sage if using. Mix well until fully combined.
  2. Shape the mixture into a loaf and place it in the slow cooker.
  3. In a small bowl, mix together ketchup, brown sugar, mustard, and Worcestershire sauce.
  4. Spread the ketchup mixture over the meatloaf in the slow cooker.
  5. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the meatloaf is cooked through and reaches an internal temperature of 160°F.
  6. Carefully remove the meatloaf from the slow cooker and let rest for a few minutes before slicing and serving.

Notes

  • Using a slow cooker liner or foil sling can make it easier to remove the meatloaf.
  • Feel free to substitute breadcrumbs or cracker crumbs for the crumbled bread.
  • Let the meatloaf rest before slicing to help it hold its shape.
