1️⃣ Prepare the crockpot – Place chicken breasts at the bottom of the slow cooker.
2️⃣ Add ingredients – Sprinkle with ranch seasoning, onion powder, and black pepper. Pour in black beans, corn, and Rotel tomatoes.
3️⃣ Add liquids – Squeeze fresh lime juice over the top, then pour in the chicken broth. Place the cream cheese block on top.
4️⃣ Cook – Cover and cook on HIGH for 3-4 hours or LOW for 5-6 hours until the chicken reaches an internal temperature of 165°F.
5️⃣ Shred & mix – Remove chicken, shred with two forks, then return to the Crockpot. Stir everything together until well combined.
6️⃣ Serve & enjoy – Serve hot in tacos, over rice, or as a dip with tortilla chips!
