Make this easy and delicious Crockpot Pumpkin Cobbler with Cake Mix! It’s a warm, comforting dessert made with pumpkin, cake mix, and warm spices, all slow-cooked to perfection in your crockpot. Perfect for fall gatherings and weeknight treats.

Ingredients

  • 1 can (15 oz) pumpkin puree
  • 1 box (15.25 oz) yellow cake mix (or spice cake mix)
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger (optional)
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 cup water (or milk for creaminess)

Instructions

  • Prepare the Crockpot: Lightly grease or line a 6-quart crockpot with non-stick spray.
  • Mix Pumpkin Base: In a large bowl, combine the pumpkin puree, brown sugar, cinnamon, nutmeg, ginger (if using), salt, and water (or milk). Stir well until everything is smooth.
  • Layer Ingredients: Pour the pumpkin mixture into the bottom of the prepared crockpot.
  • Top with Cake Mix: Sprinkle the dry cake mix evenly over the pumpkin mixture, making sure it’s spread out as evenly as possible.
  • Add Butter: Drizzle the melted butter over the top of the cake mix. Do not stir – the butter will soak in while cooking.
  • Cook: Cover and cook on low for 3-4 hours or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Add Nuts: If desired, sprinkle chopped nuts (pecans or walnuts) over the top during the last 30 minutes of cooking.

Notes

  • For a richer, creamier texture, replace water with milk or heavy cream.
  • You can top this cobbler with whipped cream or vanilla ice cream for added indulgence.
  • The cake mix can be swapped for a spice cake mix for an extra burst of fall flavor.
  • Ensure the cake mix is not pre-mixed with other ingredients before adding it to the crockpot.
