Ingredients

  • 2 large cucumbers, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/4 red onion, thinly sliced
  • 1/4 cup kalamata olives, pitted and sliced (optional)
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste

Instructions

  • In a large mixing bowl, combine the cucumbers, feta cheese, red onion, olives (if using), and fresh dill.
  • In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, salt, and pepper until well combined.
